Peanut Butter Waffles

Been wanting to try this for a good while. I found this recipe from r/KetoRecipes: And this redditor also adapted this recipe from Gnom-Gnom. Soo credit to these peeps. The closest recipe I can find this redditor referenced to is the  Keto Pancakes with Lupin Flour recipe . Main difference is the peanut butter powder but the notes say to substitute with peanut butter FLOUR? Any difference? I'll have to research a bit on that.  For my recipe I halved it because personal preference and these are the products I used: And yes, I did used a food scale. Used all these specific products with the exception of xanthan gum because I actually used  NOW brand Xanthan Gum from Amazon  but I figured metrics were negligible for such a small amount and I was too lazy to look it up (I forgot to tape the barcode in the food container it is stored in).  I made mine in a mini Dash waffle maker in the size of Texas. Chaffle Burger

I reeeeeally needed to use up the last of my ground meat that I was chiseling away at for the past 4 days. I hate the thought of a good quality ground meat going to waste so I looked up what I can do with it and came across this! I halved the recipe of the chaffle and guesstimated on my burger since it was 5.6 oz. Anyway, here is the recipe: Chaffle  1 egg 1/2 cup shredded cheddar cheese 1/8 tsp garlic powder  Burger 5.6 oz meat 3/4 tsp + 1/8 tsp Chipotle Burger Seasoning 1/8 tsp Hamburger Deluxe Sauce *1/4 cup mayonnaise *3/4 tsp mustard 1/2 tablespoon relish 1/2 teaspoon vinegar *1/8 teaspoon onion powder *1/8teaspoon garlic powder *1/8 teaspoon paprika *Pinch of Chipotle Powder Directions: Mix your chaffle ingredients and to a warmed up mini waffle maker. Scoop half the mixture in the waffle maker and cook about 3-4 minutes.  While the chaffles are cooking, make your burger. On a hot pan (not cold!) it should take 5 minutes per side. Chocolate Frosty

Poop emoji dessert oops I mean chocolate frosty reminiscent of a frosty from Wendy's. I halved the original recipe for a smaller batch version. Makes 4 3/4 cup heavy whipping cream 1 tbsp cocoa powder 1 1/2 tbsp erythritol powdered 1/2 tsp vanilla extract Pinch of kosher salt Using a hand mixer, whip everything in a bowl a few minutes or until you reach stiff peaks. Scoop everything in a sandwich bag and place in freezer for at least 30 minutes. Snip a corner and serve in 4 mini bowls. Cover unused bowls in plastic wrap and immediately put back in freezer.

Creamy Chicken and Broccoli

I scaled this recipe way down from  All Day I Dream About Food to fit a single serving snack because no one else in this household often eats what I eat. Or being home alone. I don't like saving leftovers anyway. You know those bags of frozen Boneless chicken tenderloins? Yeah that's what I'm referencing here. Use one of those. Double or triple recipe for bigger appetites. 1 Boneless Chicken Tenderloin (2.2 oz for me) 3 oz frozen broccoli 1/2 tbsp butter 1/4 cup heavy cream  1/4 cup Mozzarella shredded 1 tbsp parmesan shredded Salt and Pepper to taste. On stovetop add oil and cook chicken tenderloins with your seasonings of choice for 3 minutes per side or until internal temperature of 165 F. Set aside or place with broccoli when done cooking. While chicken is cooking, cook your broccoli. I personally just put it in the air fryer 370 F for 10-13 minutes or to your preference. Jalapeno Poppers

4 Fresh jalapenos  3/4 block cream cheese 1/4 cup shredded cheddar cheese Onion powder, garlic powder and salt to taste. Generous pinches. 4 bacon Cut bacon in half and then make vertical slits stopping just short about 1/2 inch from top. Should look like bacon pants! 👖  Rinse and dry jalapenos. Chop top off and cut vertically in half. Scoop out seeds. In a bowl mix cream cheese, cheddar and seasonings. Fill in hallowed jalapenos with cream cheese mixture. Wrap bacon around jalapeno halves so it looks like this: Place in air fryer 370 F for 10 minutes. You can add aluminum foil for better clean up or by itself.

Matcha Chia Pudding

This is a nice breakfast or snack to make ahead of time. Super easy and super minimal to make! I admittedly wasn't fond of it the first time I tried it (as it was in the beginning of my keto journey and sugar withdrawals) but when I tried it months later I have taken a 180 on it now. This recipe is from Carb Manager and the follow recipe makes 1 serving. Double up for more because I totally think you can if it fits your macros. Tips on measurements below. Here is the recipe: 1/6 cup = 2 tbsp + 2 tsp As you know, there's no 1/6 cup measurement that I know of. It is the equivalent of 2 tablespoons + 2 teaspoons. Carb Manager is not reliable for cutting down recipes giving you wonky numbers so you have to make your own chart and know how to navigate around this. If I have free time, I might work on a measurement equivalency chart but there might be some available on Google if you really want to see for yourself.
