Cheese Biscuits

My favorite recipe and really fills the void when you're craving biscuits. Ideal for dinner as a side but I have often used this recipe to make an egg sandwich for breakfast. Full Recipe:  Easy Airfryer Biscuits via Keto Connect For this picture, I made a small batch version which is also in my Small Batch Meals blog. The recipe is as follows: 1/2 cup Almond Flour 1/4 tsp baking powder  1/8 tsp Himalayan salt 1/2 cup shredded cheese (1.5 oz) 1 egg 1 tbsp melted butter 1 tbsp sour cream Air fry 400 F 8-10 minutes 

Almond Butter Fat Bombs

I made this super easy 3 ingredient fat bomb recipe from  Eating Well . I used almond butter rather than peanut butter so the macros are different.  4 tbsp almond butter 4 oz cream cheese (half a package) 2 tbsp powdered erythritol  The taste is...ehh not terrible but it scratches that itch when you are in the mood for something moderately sweet. But it's honestly nothing special at all. I might try a different sweetener next time though and experiment a little more. This makes 12 servings. Which is about .63 oz per ball on a weight scale if we want to get technical. Or you can divide evenly on a 12 cavity silicone mold and cut the measuring altogether.  When I made some jalapeno poppers for my son, I ended up having 1/4 of a block of cream cheese left so I decided to use it for half a recipe for these! I accidentally used 1 instead of 2 almond butter but these still look cute!! (Will update pic when it's done setting up in the freeze)

Keto Blender Sherbet

For my first recipe test for this blog I decided to do Carb Manager's  Keto Blender Sherbet . It was simple. Here is the recipe and directions. So after I mixed the gelatin with boiling water and everything else, I probably could have mixed it another minute more. I popped it in the fridge for 5 minutes and by the time I took it out, the gelatin had a thin layer of build up at the bottom of my bowl. Just to note should you do this recipe. I couldn't dissolve the chunks but oh well. Next time I'll keep it at room temp and continue mixing non stop until it gets cool enough to add to the blender. For ice I used 2 ice trays. Came out more like 2 cups. I used my pink pixel heart tray and the dollar tree store red Christmas tray. My sherbet turned out a bit more liquidy than expected but I am sure it's due to my 10 year old Ninja Blender oh and my incompetence I guess. However, I still enjoyed the hell out of it.
