Creamy Chicken and Broccoli

I scaled this recipe way down from All Day I Dream About Food to fit a single serving snack because no one else in this household often eats what I eat. Or being home alone. I don't like saving leftovers anyway. You know those bags of frozen Boneless chicken tenderloins? Yeah that's what I'm referencing here. Use one of those. Double or triple recipe for bigger appetites.

1 Boneless Chicken Tenderloin (2.2 oz for me)
3 oz frozen broccoli
1/2 tbsp butter
1/4 cup heavy cream 
1/4 cup Mozzarella shredded
1 tbsp parmesan shredded
Salt and Pepper to taste.

On stovetop add oil and cook chicken tenderloins with your seasonings of choice for 3 minutes per side or until internal temperature of 165 F. Set aside or place with broccoli when done cooking.

While chicken is cooking, cook your broccoli. I personally just put it in the air fryer 370 F for 10-13 minutes or to your preference.

In stovetop, use the smallest pot you can find, I used a 1 quart so don't go any bigger than that. Melt butter then saute garlic if you want (I didn't) then add heavy cream to almost a boil. When you see faint bubbles, about 1-3 minutes, then turn the heat way down to simmer and let it thicken while occasionally stirring for about 5 minutes or to your preference. 

Add your shredded cheeses both Mozzarella and Parmesan and a few shakes of your salt and pepper. This time I did about 3 shakes each from my table shakers.

Continue to stir until if gets to your desired thickness.

In a bowl place chicken and broccoli and then pour your cheese sauce over. Toss to coat and you're ready to eat!!! Another cool suggestion I'll do next time is use zoodles (zucchini noodles) in lieu of broccoli. Yum.
