Peanut Butter Waffles
Been wanting to try this for a good while. I found this recipe from r/KetoRecipes:
And this redditor also adapted this recipe from Gnom-Gnom. Soo credit to these peeps. The closest recipe I can find this redditor referenced to is the Keto Pancakes with Lupin Flour recipe. Main difference is the peanut butter powder but the notes say to substitute with peanut butter FLOUR? Any difference? I'll have to research a bit on that.
For my recipe I halved it because personal preference and these are the products I used:
And yes, I did used a food scale. Used all these specific products with the exception of xanthan gum because I actually used NOW brand Xanthan Gum from Amazon but I figured metrics were negligible for such a small amount and I was too lazy to look it up (I forgot to tape the barcode in the food container it is stored in).
I made mine in a mini Dash waffle maker in the size of Texas. I am not well versed in making Waffles that they turn into Pancake softness...is that what a waffle is supposed to be like? Or more crunchy?? Idk. But anyway, I have such a sweet tooth and so I used this sugar free maple syrup to help scratch that itch. 1 tbsp.
Now that I tasted it...I am not sure if I like it. May be the xanthan gum but I feel a weird tingle in my mouth after eating. Could be big chunks of it that didn't dissolve or something. I tried to squish the chunks best I can but yeah...that almost ruins it for me. Other than that, I taste the peanut butter powder but the sweetness still didn't quite hit that itch where it felt like I was eating just plain bread. Soooo future idea but I think this might be perfect for a regular mini sandwich or even to have a chicken waffle sandwich. I'm sure there's a keto version out there to fry chicken with pork rinds or something.
All in all...not tasty enough for me to have as a stand alone but could be great to supplement this in lieu of bread.

So yeah. An ideal breakfast would be a waffle with a splash of sugar free maple syrup with some fruit. It wasn't top tier for me but maybe for you?
